The Caboose is a fresh fish cutter stand and a fun hidden gem in Barbados. If you were to take a walk from Speightstown along the coast road towards the old abandoned Heywoods Village, you’d stumble across what looks like a landlocked weather worn, brightly painted, fishing boat; located on a sand covered lot. Take a closer look and you see it’s a trendy hangout spot where locals and tourists alike can gather, have a fresh fish sandwich, Banks Beer or delight in their popular Rum Punch and just shoot the breeze.

My husband and I visited twice.
On Sunday, we arrived around 11am. There wasnt a line or anything, just groups of people seated at different tables. We seated ourselves and a server brought us paddle #6. He directed us to line up according to the number we received. Waiting in the queue was a slow process. It took approximately 20-25 mins to reach to the front to place the order and pay. The wait for the actual food was around 30 mins. The fully loaded cutter sandwich was 5/5. The fish was grilled perfectly and the bun was really soft. It was really fresh and flavorful, literally one of the best fish sandwiches we’ve had.
We revisited on Wednesday around 3pm for take out. The place was packed. There was music and roosters roaming about. We joined the line and received paddle #12. We waited 30+ mins in the queue to place the order. I did not like being met with disdain from the female cashier when I politely asked how long it would be for our order to be ready. We were told 30 mins. The wait time for the food was actually 45+ mins. On this occasion, the fish was a bit tough and seemed overcooked. We asked for all the sauces minus pepper but the cutter was really dry. It was also slightly warm, like it had been sitting out for a while before it got to us. We left disappointed this time around.
Overall, the food was inconsistent, and the service was extremely slow. I would think twice about returning. If you decide to visit, be prepared to wait.

Amazing fish cutters and an excellent ambiance! The staff is very friendly, but I’m giving 4 stars for service because we waited nearly two hours for our meals. Fortunately, I spent the wait time checking out local souvenirs in front of the Caboose. If you're in the area, the Shell Shop is a must-visit! The owner Olivia is absolutely lovely and offers the best prices around. She’s the best!

Delicious fish cutters with a man playing steel pan in the background. Good customer service and the long queue goes down quickly I felt. I preferred this to Cuz personally. Atmosphere was great too. Parked on side of the road.

Best fish cutter on the island, hype totally justified! I'm usually hesitant of fad/viral places but this was banging. There was a steel drum player and it set the perfect scene. Rum punch was on point. 10/10 would recommend

Great food, great service, beautiful setting. The fish cutters were perfect and the rum punch was super yummy. Be prepared to wait a bit to order, but the food comes out quickly and is a great deal. They take Visa and MasterCard in addition to cash. Beautiful and relaxed setting near the beach. Get the pepper sauce!!
