You must experience Carbo's while exploring the beautiful island of Nevis. True island experience! From the moment you step in, you will feel welcomed, and all you need to do is just sit back and fully embrace the genuine, kind, and chill Caribbean vibe. Make sure you try the delicious goat water or fried fish with cornmeal. All cooked with fresh local ingredients - a true labour of love by the amazing wisdom filled Carbo himself. And the meal is not complete without an authentic rum punch or two. We can truly say this is our favourite place on the island not just for the food but also conversation - always a well spent Saturday. We come in for lunch and somehow leave after sunset.

BEST Goat Water in all of Nevis and St Kitts. WOW. It doesn't get any better - best and most well known goat water (stew) on the island but only open on Saturday from 11 am until late at night but make sure to get there early before he runs out - like before 3 pm! Goat water is marinated for 24 hours and is very tender in a breadfruit gravy. Truly unique and totally worth the trip. Order his homemade Carbo rum punch. If he runs out of Goat water there is always great snapper with polenta and okra. Join conversations at the bar on topics you will never find anywhere else. You will meet people here for the first time and have friends for life.
